One of the things I get most excited about at Christmas time is the fabulous food!
I love this Chocolate tart, because it is so quick to make, sweetened only with dates and can be made to look festive with any decorations you choose!
I used cherries, as it is a Christmas tradition for my family to get a big bag of cherries from the farm each year.
Feel free to experiment, put your own flavours in and have fun. You can even swap the cocoa in the tart centre for a handful of raspberries for a pink, berry tart!

Ingredients:
Base:
1/2 cup dates
2/3 cup almonds (or hazelnuts)
1/3 c dessicated coconut
3 Tbs cocoa powder
3Tbs cocoa nibs
1 Tbsp coconut oil
pinch of salt
Filling:
1 cup coconut cream
1 2/3 cups cashews (soaked overnight in water)
2 Tbs cocoa powder
1/2 cup coconut oil (melted)
1/2 cup dates
1 tsp vanilla extract
Toppings:
Fresh or frozen cherries or berries
What to do:
1. Start by placing all the ingredients for the base in a food processor and blend until well combined. Press the mixture into a springform cake tin line with paper. Refrigerate while you make the filling.
2. Place the ingredients of the filling into a bullet blender. ( I find this makes it extra smooth and creamy) Then pour it evenly over the base.
3. Refrigerate until set. 6 hours or overnight.
4. Decorate beautifully!
