I always like to start the week with some baking so that I have some healthy options on hand for when I feel like a sweet treat.

 

Banana and Dark Chocolate Loaf

What you need: ​

1/2 cup of coconut milk from a carton

1 tsp apple cider vinegar

3 overripe bananas

2 eggs

1/3 cup melted coconut oil

2 Tbs honey or maple syrup

1 tsp vanilla

3/4 cup buckwheat flour

3/4 cup almond meal

2 tsp chia seeds

1 tsp baking soda

2 tsp mixed spice

pinch of salt

100g chopped dark chocolate

What you do:

  1. Preheat the oven to 180 degrees
  2. Combine the milk, vinegar, mashed banana, eggs, oil, and honey in a bowl
  3. In a separate bowl combine the buckwheat flour, almond meal, chia seeds, baking soda, spice, and salt.
  4. Combine the dry ingredients with the banana mixture and stir through the chocolate
  5. Pour into a loaf tin lined with baking paper
  6. Bake for 45 minutes, until golden brown

It’s lovely toasted in the sandwich press with a spread of ricotta or a scoop of natural yogurt!
