I always like to start the week with some baking so that I have some healthy options on hand for when I feel like a sweet treat.
Banana and Dark Chocolate Loaf
What you need:
1/2 cup of coconut milk from a carton
1 tsp apple cider vinegar
3 overripe bananas
2 eggs
1/3 cup melted coconut oil
2 Tbs honey or maple syrup
1 tsp vanilla
3/4 cup buckwheat flour
3/4 cup almond meal
2 tsp chia seeds
1 tsp baking soda
2 tsp mixed spice
pinch of salt
100g chopped dark chocolate
What you do:
- Preheat the oven to 180 degrees
- Combine the milk, vinegar, mashed banana, eggs, oil, and honey in a bowl
- In a separate bowl combine the buckwheat flour, almond meal, chia seeds, baking soda, spice, and salt.
- Combine the dry ingredients with the banana mixture and stir through the chocolate
- Pour into a loaf tin lined with baking paper
- Bake for 45 minutes, until golden brown
It’s lovely toasted in the sandwich press with a spread of ricotta or a scoop of natural yogurt!
